I found how to install cygsshd with a different name:
ssh-host-config --yes -u "cyg_server" -c "binmode ntsec tty" -w {{ pass }} -N "sshd"

Just delete the service and reinstall with the same settings under the new name or change the setup script to use the different name (it's not part of the install with setup anyway, so you already need to run it manually or from a script after setup has finished).
