The above macro takes a pointer to cyg_i2c_bus. Try this:
CYG_I2C_DEVICE(cyg_i2c_eeprom, &cyg_i2c_xyzzy_bus, 0xA0, 0x00,CYG_I2C_DEFAULT_DELAY);
