Ok, after some experimentation, I got this to work with the following
config.status:
#!/bin/sh
# This file was generated automatically by configure. Do not edit.
# This directory was configured as follows:
../gcc-3.0.4/configure
--with-gcc-version-trigger=/home/jmonk/gcc/gcc-3.0.4/gcc/version.c
--host=i686-redhat-linux --infodir=/usr/info --mandir=/usr/man
--enable-shared --enable-threads=posix
--enable-languages=c,gcov,c++,objc,java,f77 --enable-long-long
--enable-namespaces --enable-multilib --with-gnu-as --with-gnu-ld
--with-system-zlib --without-x --norecursion
# using "mh-frag" and "mt-frag"
