I have a similar problem on Catalina and Big Sur.

GDB failed with message: I'm sorry, Dave, I can't do that.  Symbol format
`elf64-x86-64' unknown.

Some similar problem is also reported on stack overflow where I gave an ans=

what worked for me:

However, building from source did not solve the problem for everyone so
hopefully some GDB maintainer can have a look into it.
