I'm totally new to GCJ, is it possible to compile, for example,
JDK/JSDK demos using Sun's supplied class libraries?

No, the short answer is that you can't use Sun's runtime with GCJ.
Technically speaking, it might be possible with some hacking - but the
JDK's license does not allow you to redistribute the runtime, so it
wouldn't be useful for most people.
